meatless monday: caramelized onion dip

I know what you’re thinking: who wants to eat onion dip the Monday after the Superbowl, when I’ve already indulged in my share of dips? Answer: because you’ve made a huge batch that will likely last the week. This particular onion dip, from the always solid 101 Cookbooks blog, is not made from a little powdered packet, but instead from real, whole ingredients, including protein-rich Greek yogurt and caramelized yellow onions. The trick is to really caramelize the onions so they develop a nice sweetness to the tanginess of the sour cream and yogurt. Recipe here. Enjoy!
