Happy President’s Day! My sweet husband, Michael, has the day off and made a simple, delicious mushroom soup, a perfect lunch for a snowy holiday.
“Why the Coke?” I asked when getting his secret recipe. He said he was looking for something to cut the buttery earthiness of the mushrooms without adding a lot of sugar, something with a little zing. Interesting! Keep in mind, the base of the soup is pre-made, so no need to simmer this for hours on end. Enjoy!
MICHAEL’S MUSHROOM SOUP:
1 box of organic mushroom soup (like Pacific Natural Foods)
3 c. crimini mushrooms, sliced
1 c. arugula
1/2 can coke (seriously)
chili pepper flakes to taste
salt & pepper to taste
rosemary to taste
Add all ingredients together in stock pot, simmer for 10-15 min, serve hot with a side of cranberry walnut bread.
