meatless monday: zucchini quinoa burgers

burger heaven: zucchini + quinoa.

I’m not gonna lie: I don’t love zucchini. This ubiquitous summer squash was, for some reason, the only thing to survive in my parents’ garden and they would force feed it to us from June to September. Too much zucchini will ruin zucchini for you. Unless it’s pulverized and baked into a chocolate bread or deep fried, Paula Deen-style, I’m not super interested. BUT! These burgers might just change my mind…

Zucchini Quinoa Burgers
Serves 8-10

2 c. quinoa, cooked
1/2 c. mozzarella, grated
1 c. cottage cheese
1 c. zucchini, grated or chopped
3 eggs, beaten
3 tbsp. whole wheat flour
2 green onion stalks, roughly chopped
1 c. bread crumbs
3 tbsp. olive oil
1 tsp. cumin seeds
2 cloves garlic, chopped
salt & pepper

In a large bowl, combine all ingredients except olive oil. Mixture will be sticky. If necessary, add more bread crumbs for thickness. Form into 10 patties. Refrigerate for at least 10 min. Heat olive oil to over medium heat in a skillet; add patties and cook 4 min. on each side or until golden brown. Serve immediately with toasted hamburger buns, a simple salad, fresh berries, and sunshiny happiness.
