IT’S TOO HOT TO EAT. But it’s never too hot for a bright, citrusy, refreshing smoothie.
This recipe comes from the fab Lunch Box Bunch blog. It takes a bit more work than your traditional smoothie, but totally worth it (plus the extra lavender lemonade gives you a nice base for future summertime beverages). A great way to nurse a maj sunburn and recover from a wonderful holiday weekend.
Lavender-Lemonade Honeydew Frosty
via Lunch Box Bunch, serves 2
For the lavender lemonade:
3 tbsp. culinary lavender buds
1 c. boiling water
2 tbsp. sugar
2-3 tbsp. maple syrup (or agave)
1/2 c. fresh lemon juice
1/4 c. fresh lime juice
a pinch of lime or lemon zest
1 c. chilled coconut water
1 c. ice (OR: 1 c. of coconut water ice cubes)
Steep lavender buds in boiling water for 10-15 min. Strain buds from water. Briskly stir in sugar and syrup until dissolved, then stir in chilled water and ice for fast cooling. Stir in or steep zest at end.
For the honeydew frosty:
1/2 c. lavender lemonade
3 c. honeydew cubes, frozen
Add all ingredients to blender and blend until smooth and creamy. Garnish with lavender sprig and lime/lemon wedge. Enjoy!
